I've made a lot of Creamed Crab Meat Soup in my day. I'm a soup lover, and this recipe is one of my favorites. I've tried a lot of different variations, and this one is the best.

1/2 lb. crab legs 6 cups chicken broth 1/4 cup flour 1/2 cup milk 1/4 teaspoon salt 1/4 teaspoon black pepper 1 tablespoon butter 1/2 cup diced onion 1 garlic clove, minced 1 teaspoon dried thyme leaves 1 (12 oz) can evaporated milk Instructions:

 1) In a large pot, bring the chicken broth to a boil.   2) Add the crab legs and cook for 5 minutes, or until cooked through.   3) Remove the crab legs from the pot and set aside to cool.     4) In a small bowl, whisk together the flour and milk until smooth.     5) Add the flour mixture to the boiling chicken broth and stir until thickened.     6) Add the salt, black pepper, butter, onion, garlic, and thyme leaves and stir well.   7) Reduce the heat to low and simmer for 10 minutes.    8) Add the evaporated milk and stir well.   9) Return the crab legs to the pot and cook for 5 minutes, or until heated through.     10) Serve hot with some nice crusty bread for dipping!
